Fresh preparation also allows us to monitor sodium and sugar carefully. We accommodate residents with food allergies by knowing exactly what goes into each recipe. This transparency strengthens consistency and protects dietary standards.
I adapt meals to meet senior-specific needs and preferences. I reduce sodium and added sugars whenever possible. I also limit saturated fats and choose leaner cuts of meat. These decisions support heart health while preserving flavor.
We balance comfort foods with fresh, health-conscious options through portion control and smart cooking techniques. Instead of frying, we sauté, bake, or simmer. These methods minimize excess fat while maintaining depth and texture.
One resident favorite made entirely from scratch is red beans and rice. I soak the beans overnight, then drain and simmer them the next day. I sauté andouille sausage with green peppers, onions, and celery before adding them to the pot. I season the dish with bay leaves, oregano, smoked paprika, garlic, and thyme. Then I enrich it with smoked turkey and simmer until tender and flavorful. Finally, I serve it over freshly steamed rice and finish it with a simple garnish.
